15,500 Drinks Across Two San Francisco Conferences

Monte Carlo turned event space at Snowflake and Databricks into fully branded cafés. When Databricks Day 1 opened to the full conference, demand hit five times the plan — and we rebuilt the operation while it was running.

01 — The brief

Two Branded Cafés, One Week Apart

Monte Carlo led the branding and visual transformation of both spaces. We worked alongside them on how each café would actually run — station placement, guest flow, queuing, beverage production and back-of-house workflow — so the space could perform as a high-volume café, not just look like one.

Snowflake ran on two blumbru stations. Databricks grew to five: two exterior stations for drip and cold brew, and three interior stations for espresso and matcha. All core equipment travelled from Los Angeles.

02 — The challenge

Planned for 1,500. Served 7,500.

The Databricks café was built mainly for VIP guests, with roughly 1,500 drinks expected as the Day 1 maximum. Once it opened to the wider conference, we served around 7,500 that day — about five times the plan.

That volume used up nearly all the inventory brought from Los Angeles with two full days still to go. Staffing, production, replenishment and crowd flow all had to change while service was already under way.

03 — What we did

Rebuilding the Operation Mid-Service

01

Added staff and split the roles

We brought in more team members and separated guest-facing service from dedicated back-of-house production, so baristas could stay focused on guests.

02

Made the commissary the production hub

A back-of-house commissary prepared ingredients and beverage components continuously to keep all five stations supplied.

03

Sourced locally in San Francisco

With our Los Angeles inventory nearly gone, we quickly set up supply through local roasters and vendors for coffee, milk, ingredients and supplies.

04

Adjusted flow around real demand

Production and service systems kept adapting to actual volume while beverage service continued without interruption.
